The Salatins have teamed up with Joe Cloud to purchase T&E Meats,
the federal inspected processing facility in Harrisonburg that Polyface
uses for its beef and pork processing. The following position is now
available to work with us:
Lead Butcher/Meat Processor
Small local meat processing
plant with retail/wholesale operation looking for meat cutter.
Ideal candidate will have experience with animal slaughter and
processing of whole animals, as well as a background with food service
in retial or restaurant setting. Ability to handle meat cutting fom
primals to sub-primals to final foodservice cuts desired.
Experience with artisanal-scale processed meat products such as
sausage, salami, bacon, wursts, jerky, and other charcuterie products
is a plus. Understanding of local/ecological food movement a plus
as well.
Duties may include meat cutting, processing of sausage and hamburger,
meat smoking, development of processed meat products line, ordering,
work-planning, producer coordination, personnel supervision, and
cleaning. Position may include occasional turn on the kill
floor. Plant is re-focusing operations to support local producers
and develop markets for local grass-fed meat products, as key element
in a growing local producer network.
